Puffs and Peaks – Highly-Raved Custard Cream Donuts (Matcha And Taro) At Tampines. From Popular Home Bakery To Bakery Cafe

Some of you may be familiar with popular online-baker Puffs and Peaks. They have been around for a while doing online bake sale, as well as making occasional appearance at pop-up events.

Good news for those who resides in the east, Puffs and Peaks has opened a bakery café at Tampines Central Community Complex.

Run by a daughter and mother duo, Puffs and Peaks produces handmade bakes in limited quantities and small batches.

Quoted a friend of mine who have been following them on IG, their custard cream donuts are highly raved by many and it was difficult to secure an order slot when they ran bake sale.

Upon entering the store, I was a little surprised to be greeted by an unexpected queue and half-emptied donut display shelf.

The patrons in front of me were buying donuts in mass quantity, and I secretly prayed hard for them to please, please leave me with some.

There were four donut flavours ($3.80 each) available at point of visit – Pandan Coconut, Matcha, Taro and Passionfruit , and the flavours rotate on a weekly basis.

I was lucky enough to snag one of each flavour, of which passionfruit was already left with just the last few solo pieces.

On first bite, I was pretty much sold.

Their donut texture was rather light and airy, dusted with sugar granules and accompanied with generously stuffed custard cream fillings.

Contrary to other donuts that usually come with denser and heavier texture, this combination was on-point and I could easily finish a donut on my own without feeling jelak.

As a matcha lover, I liked that its matcha filling has distinctive earthy notes followed by bitter-sweet after taste.

If you are not tea person, go for the Pandan Coconut which was creamy with coconut flavour coupled with lightly infused hints of pandan fragrance.

Other than their highly raved donuts, they also produce an assortment of bakes like Bread Rolls, Cookies, Brownies and Layered Cakes.

Off the display shelf, I could identify whole loaf of Country Sourdough ($9), Brookies Cookie ($3.70), Earl Grey Blueberry Crumble Cake ($5.50) and many more.

I also took a liking to their Pear Chocolate Loaf Cake ($4.20) which was moist and not sweet, baked with dark chocolate and embedded with chunky pear fruits for the bite texture.

For first day opening, business was brisk and there were constantly people coming in to do takeaways.

“Do you have Cinnamon Rolls?”, was another frequently heard question from the queuing patrons. Seems like they really DO have a following and the patrons know their stuff well.

Now I will have to find another opportunity to return to camp for cinnamon rolls.

Point to note: Tampines Central Community Complex is not the same location as Our Tampines Hub and can be reached by taking bus 69 from Tampines bus interchange.

The Bread Rack – Artisan Bakery Cafe Serving Freshly Made Sourdoughs At Yio Chu Kang

Located near Hougang and Serangoon, The Bread Rack is at Yio Chu Kang Road is the newest bakery cafe opened in that area.

It is directly opposite Korean café Urban Table , and next to the famous Soi 19 Thai Wanton Mee and Dim Sum House at Space@Kovan.

Frankly speaking, I only expected it to be a small takeaway shop as their online menu only stated breads, pastries and coffee without any brunch items.

Stepping inside, I was pleasantly surprised by the huge industrial themed space with tall ceilings and a spacious compound with 20 seats.

On one an end of the cafe, the freshly baked breads and pastries were all laid out in an orderly manner at the glass counter.

Diners can choose between Baguette ($3.80), Country Loaf ($9), Seeded Sourdough ($10) and Honey Wholewheat ($10) from one rack and Butter Croissant ($4), Almond Croissant ($5), Pain Au Chocolate ($4.50) and Raisins Scroll ($4.80) on the other rack for either dine-in or takeaway.

My favourite was the Almond Croissant ($5) came with sliced almond and icing sugar as toppings, with smooth, velvety almond cream filling on the inside.

The outer layer of the croissant was crispy and flaky, whereas the inner layers and moist and creamy, giving it a good textural contrast.

The Raisins Scroll ($4.80) was a Raisin sweet roll with a flaky crust, topped with crushed pistachio.

The Danish pastry was buttery with a layer of jam within that added some sweetness to the overall combination.

Both the Butter Croissant ($4) and the Pain Au Chocolate ($4.50) were safe choices, not as buttery (and greasy) with a lighter taste but with the right texture that was perfect for a light bite.

Coffee ($4 – $6) and Tea ($4.50 – $5) are also available on their menu, that complements their bakes in store.

Using a single origin from Brazil for their espresso-based drinks, the usual items such as Double Espresso ($4), Macchiato ($4), Black ($4.50), White ($5.50) and Dulce Latte ($6) can be found.

The Dulce Latte ($6) seems interesting, made with Dulce de leche, a combination or fresh milk and sugar slowly cooked to yield the condensed milk, before drizzling over a cup of Macchiato.

The result is a cup of ’kopi’ with latte art, slightly sweeter than a cup of normal White ($5.50).

Their pastries freshly baked in house are the highlights as my cup of White ($5.50) was slightly burnt with a lingering bitterness.

The Bread Rack is a promising cafe with their selection of bakes perfect for a light breakfast.

Perhaps they can explore and expand their menu by incorporating their bakes into brunch items one day, which can be more hearty and wholesome.

Patisserie CLÉ – For Blood Orange, Orh Nee Tarts And Truffle Pastries At Siglap #EastCoastPlan

$

From East Coast to Siglap, Patisserie CLÉ has expanded to be part of the “East Coast Plan”.

This “East Coast (cafe) Plan” has since expanded with new openings of Neptune, Seng Coffee Bar, The Brewing Ground, East Coast Commune, Sundays Ice Cream and La Fez in the recent few months.

Patisserie CLÉ (means ‘key’ in French) is inviting patrons to unlock and uncover new experiences, with an expanded menu here at Siglap.

However, note that this is only for takeaways (so technically not a café) with no dine-in seats available.

Their philosophy is to “uncover the key to unlock everyone’s hearts” by creating heartfelt sensations through a balance of flavours and textures, and between Asian and Western palates.

The duo owners Joy Chiam and Germaine Li first met while learning pastry-making at Ferrandi Paris.

Upon graduation, Joy subsequently worked at the former Joël Robuchon Restaurant whereas Germaine Li joined Tarte by Cheryl Koh (and thus some resemblance in the creations) before opening their first brick-and-mortar shop in 2020 at the historic Paya Lebar Office (formerly Paya Lebar Fire Station).

Here at Lucky Heights with a bigger kitchen, the shop is able offer artisanal coffee and a wider variety of bakes such as outlet-exclusive pastries which is a look back at their French culinary roots.

Depending on the seasonal ingredients available, their selection of tarts and cakes rotates on a regular basis.

There were Blood Orange Tart ($10), Orh Blanc Tart ($8), Chocolate Banana Tart ($8), Strawberry Vanilla Tart ($8), Cognac Caramel Chocolate Tart ($8), Blueberry Rose Tart ($8), Passion Sesame Tart ($8), Bourdaloue Tart ($8), and Mixed Berry Tart ($9) during my visit.

I decided to order the Passion Sesame Tart ($8) that comes with sesame cream, passion fruit cream, Chantilly cream and passionfruit on a sweet tart dough.

The Passion Sesame Tart ($8) was well balanced with a citrus punch from the passionfruit and the sweet and earthly flavour of the sesame, the latter adding a grainy texture in contrast to the smooth passionfruit cream.

The tart base was crumbly and buttery, adding an aromatic fragrance.

New on their menu are the Classic Croissant ($3.80), Pain Au Chocolat ($4.80), Almond Croissant ($5), Mixed Berry Danish ($5.80), Lucky Clover ($6.50) and Truffle Ziggy ($8.50).

My favourite was the Lucky Clover ($6.50), also known as Patisserie CLÉ’s edible good luck charm.

The puff pastry came with swirls with generous amount of fragrant spring onion, garlic and bacon in between the folds, shaped like an escargot.

The exterior crust was well-crafted with a golden-brown crispy texture that was both buttery and fragrant. It reminded me of a scallion pancake aka “cong you bing”.

For a more substantial portion, the Truffle Ziggy ($8.50) is a savoury bite filled with truffle cream, wild mushrooms, arugula, cherry tomatoes and feta cheese.

This pastry is actually inspired by the iconic zig-zag stairway in the Lucky Heights neighbourhood.

Trust me, if you ever tried walking there, you can totally relate the amount of work need to climb up the slopes to reach the shop.

The Truffle Ziggy ($8.50) came with a comforting mix with soft mushrooms in contrast to the crunchy arugula and chewy baked pastry.

For those who prefer a lighter meal, there is the Classic Croissant ($3.80) that has a more “bready” texture like a brioche instead being light and airy.

Apart from their selection of bakes, Patisserie CLÉ also offers artisanal coffee to-go using coffee beans from Smitten Speciality Coffee and Tea.

The usual offerings such as Espresso ($3.50), Long Black ($4.50), Flat White ($5) and Latte ($5) with options of Iced ($0.50) are available.

Keep a look out for their outlet at Paya Lebar which will be converted into a dine-in concept store in the future.

Pickle Bakery – Hidden Artisanal Sourdough Bakery With Tartines And Pastries At Everton Park

$

0

We are beginning to see more bakery cafes opening in clustered areas across Singapore, specialising in croissants, sourdough, baguettes and the likes.

The Pickle Bakery is the newest addition to Everton Park, an area which also houses the famous Ji Xiang Confectionery that offers Ang Ku Kueh, Nylon Coffee Roasters, The Better Half and Little Oasis.

Everton Park is considered one of the oldest neighbourhood in Singapore which has this quaint and laid-back vibes. But due to its vicinity to Outram Park, Keong Saik and Duxton, you do get the occasional hipster indie shops to be found here.

If you happen to be in the Outram Park vicinity, you can explore newer cafes such as Ballad Of Anna May (Craig Road), At3 (Kampong Bahru), Dolc Patisserie (Kampong Bahru), Kream & Kensho (Kampung Bahru), and the revamped Strangers’ Reunion (Kampong Bahru).

Though their name Pickle Bakery reminds me of the tongue twister – Peter Piper, you won’t be able to find pickled peppers in there but instead, two female bakers – Liz and Jas.

The humble shop serves mainly as a takeaway bakery with limited seats both indoors and outdoors.

They prepared the food based on memories and experiences through their travels, backpacking endeavours and the people they met which is translated into the products on the shelves.

Pickle Bakery uses quality flours and heritage blends for all their bakes.

All their ingredients are prepared in-house, from sprouting to pickling, preserving and long periods of fermentation to obtain their fruits of labour.

Their menu rotates on a regular basis but focuses on Sourdough Loaves (Country $10, Seeded $11, Baguette $4) and Viennoiseries (pastries made from a yeast-leavened dough).

Recommendations also include Plain Croissant ($4.50) and Kinako Snail ($5.00).

Their Tartines, a slice of bread topped with sweet or savoury toppings, are only available after 9am.

There are two types of choose from include Parma Ham, Burrata & Balsamic Vinegar ($14) and Mushroom, Potato, Béchamel & Aged Cheddar ($11).

Do not under-estimate the size as each tartine is about 7 to 8 inches wide, like a mini pizza.

I enjoyed the Parma Ham, Burrata & Balsamic Vinegar Tartine ($14) that was like a brunch dish on its own.

It had a good mix of textures between the soft burrata, buttery parma ham and chewy sourdough.

The balsamic vinegar added a flavourful touch, which complemented well with the savoury parma ham and the tangy sourdough bread.

The Mushroom, Potato, Béchamel & Aged Cheddar Tartine ($11) tasted ‘healthier’, with a comforting, hearty and more filling portion.

Apart from the Sourdough Loaves and Tartines that are more substantial in portion, The Pickle Bakery also offers smaller bite-sized bakes.

These include Assorted Sourdough Buns – Figs Blue Cheese & Walnut, Herbs & Kalamanta Olives ($5.50), Sprouted Quinoa ($5) and Viennoiseries: Original Croissant, Smoked Cheddar Sausage Roll, Black Forest Ham, Mozzarella & Pickle Square.

One thing to note is that they do not offer coffee or drinks on their menu, so technically speaking they are not considered a cafe but a bakery. But you can always head over to Nylon for some coffee.

Recommended to try is one of Pantler’s best-selling signature cakes, Yatsura (from $34 for whole cake, $9.50 for slice). Fade with French Morello cherries infused with Kirsch, alternating layers of sponge and chocolate cream are peppered with bits of cherries to create this heavenly cake. As a finishing touch, it is topped with a Kirsch-infused cream and more cherries.

Rotiboy Singapore – Popular Malaysian Bakery With Signature Coffee Buns Reopens, At Paya Lebar KINEX

Rotiboy first started off in Penang, Malaysia in 1998, and subsequently expanded to other parts of the world (Indonesia, South Korea, China and Saudi Arabia), including Singapore in 2004.

But shortly, the brand closed all their existing outlets here in 2006.

Strange but yes, it has made a comeback 15 year later, at basement 1 of KINEX.

Despite their short stint in Singapore back then, my memories of Rotiboy was the nostalgic aroma when I first stepped into JB Sentral. (Fond memories of those convenient weekend overseas trips for Singaporeans just across the Causeway.)

Oh boy, the familiar scent of the fresh-from-the-oven buttery bakes from Rotiboy that I recalled.

Memories of me and my friends bagging them on our way back to Singapore and failing to resist the temptation of gobbling down a few while queueing for public transport at the checkpoints.

With Rotiboy’s comeback amidst Covid-19 in Singapore, the management has put in place an online pre-order system on their official website and customers will be allowed to pre-order one day in advance.

The last time I checked their website, the earliest date available is in 5 days’ time.

Even though Rotiboy does not accept walk-in customers at the moment, do not be surprised to see a long line outside the shop.

Unfortunately, that is not the queue to cross the JB-Singapore checkpoint, but for collecting pre-orders made online.

So, what is Rotiboy?

Rotiboy is also known as a Mexican Coffee Bun due to a fluffy bread dough used as the base and a coffee infused buttery cookie crust on top.

This reminded me of a Hong Kong Bolo Bao or even a Japanese Melonpan, with an egg wash coating in the former and sugar dusted in the crust for the latter.

Four different flavours are available, namely their Original Rotiboy (1 for $2.50, 5 for $11.50), Mochaboy (1 for $3, 4 for $11), Cheeseboy (1 for $3, 4 for $11) and Buttermilkboy (1 for $3, 4 for $11).

For the undecided, customers can also choose the Special 4 for $11 and get to choose any 4 flavours.

After waiting in queue for 40 minutes for collection, the buns are served warm and best to consume it immediately.

Alternatively, there are instructions stated to heat up the buns in a pre-heated oven at 150 degree Celsius for 5 minutes before eating.

My favourite was the Mochaboy (1 for $3, 4 for $11) with a molten layer of chocolate in between, which further enhanced the coffee flavoured cookie crust on top.

I appreciated the Original Rotiboy (1 for $2.50, 5 for $11.50) that is served without any fillings in it, simple yet flavourful.

The bun was enveloped by soft, airy and fluffy bread with a slight textural contrast in the crispy coffee-infused cookie crust on top.

The Buttermilkboy (1 for $3, 4 for $11) had a familiar taste that we grew up with, the usual local toast slathered with sugar and salted butter, with additional chocolate bits in the cookie crust.

The Cheeseboy (1 for $3, 4 for $11) had a more savoury touch, filled with cream cheese fillings that is not overwhelming.

So near yet so far, the memories of the crowded checkpoints and getting our passport stamped at the customs are fading away when the international borders had closed for more than a year due to Covid-19.

Till then, the Rotiboy outlet here can possibly satisfy those cravings.

Maison Sucree – Bakery Known For Croissants And Artisanal Bakes Opens At Balestier (Whampoa)

That’s fast. A few months after bakery-cafe Maison Sucreé launched at Lengkok Bahru (Redhill), the team has opened another outlet at Balestier.

It is located along the main road near Whampoa Food Centre, next to Eastern Rice Dumpling.

A little background of the bakery: it is opened by the same team behind Ashes Burnnit at Golden Mile Food Centre (the stall that the Food King team and I awarded 3 stars to).

The head chef Tommy Lim has more than 10 years of experience in the industry, and used to be the head baker at Jones the Grocer. He currently spearheads the production of viennoiserie, breads, and muffins at Maison Sucree.

Every croissant baked is prepared 3 days prior, with ingredients such as natural homegrown levain from Brittany France.

The usual croissants available include Butter Croissant ($3.50), Chocolate Croissant ($4), Almond Croissant ($4.50) and seasonal specials such as Gula Melaka Croissant and Nutella Croissant.

Unfortunately when I visited the Balestier store mid-afternoon, I was faced with sad displays of almost empty-shelves, and was informed ”almost everything is sold out”.

When I asked if there is a difference in bakes between the two outlets, and for a menu to refer to (as there is one at Redhill), I was told to ”just refer to the Instagram highlights”.

I previously tried the Original Butter Croissant ($3.50), and it was delightfully crisp (crispier than many of the famous brands out there) with good amount of fluffiness and buttery aroma.

However, I noted that the Croissant (and even the other bakes) on the display shelf didn’t have that beautiful ‘glow’ and consistency in sizes. It was disappointing to a fan, so hope this is just opening jitters, and that the team will get back that initial momentum.

In terms of tarts and pastries, there are the Lemon Meringue ($7), Chocolate Salted Caramel ($7), Mixed Fruits ($7), Signature Mille-Feuille ($8) and Paris-Brest ($8).

There are also buns such as Coffee Bun ($2.50) – reminding us of Rotiboy; and those with other flavours such as Raisin Bun ($2), Blueberry Bun ($2), Custard Bun ($2), Creamcheese ($3), Chocolate ($3), and Cinnamon Roll ($6).

While there are plated desserts and seats over at the Redhill outlet, this is primary a takeaway-bakery store.

Sourbombe – Instagrammable Doughnut & Croissant Shop Opened By MasterChef Singapore Runner-Up At Dhoby Ghaut

$
0
0

Sourbombe has finally shifted from an online business to a brick-and-mortar shop on the 2nd level of UBS Singapore Business Hub at 9 Penang Road.

This is where Park Mall or the iconic Fish & Co. at Glass House used to be, which undergo a total revamp to welcome a new array of F&Bs including Pi Food, Edith Patisserie Cake Bar and Degree Celsius Cafe on the ground floor.

Genevieve Lee, runner-up of MasterChef Singapore’s first season, first started her online business Sourbombe in August 2020, focusing on sourdough Bomboloni, an Italian doughnuts piped with various fillings.

With a spacious and spanking new takeaway shop front that houses their kitchen and retail section, Genevieve and team would be able to increase her scale of production and offer more flavours and selection there.

Using homegrown sourdough starters for all her bakes, customers can look forward to Sourdough Bomboloni aka Sourbombe (Plain $3.60, Standard $4.80, Premium $5.60), and Sourdough Loaf Cakes ($8.90).

Also available are Sourdough Croissants, available in very limited quantities.

Their flavours are artisanal with six signature ones permanently on the menu, namely the original Cinnabombe ($3.60), Lavender-Lime Mascarpone ($4.80), Hojicha Caramel Crunch ($4.80), Passionfruit & Caramelised Banana ($5.60), Blueberry & Lemon Thyme ($4.80) and Basque Burnt Cheesecake ($5.60).

For the original experience, the Cinnabombe ($3.60) was such a delightful treat, simple but so soft, fluffy and chewy yet airy at the same time, just lightly flavoured with cinnamon and sugar.

Check out their 3 seasonal and rotating flavours: Black Sesame Peanut Butter ($5.60), Burnt Honey & Sage Walnuts ($5.60) and Basil Cream & Rhubarb ($5.60).

The Basil Cream & Rhubarb ($5.60) was a surprise and one of my favourites, as I expected it to be more savoury and pesto-like.

Instead, the basil was light but distinctive with herbaceous notes, coupled with lemon balm and lime in the custard and a small amount of tangy rhubarb compote to elevate the taste.

For a stronger and more robust flavour, the Black Sesame Peanut Butter ($5.60) comes with earthly and nutty notes from both the black sesame and slightly salted peanut creme, almost like eating a 2-in1 glutinous rice balls (tangyuan).

There is also an ingenious infusion of botanical herbs in some of their flavours such as Lavender-Lime Mascarpone ($4.80), Blueberry & Lemon Thyme ($4.80), Burnt Honey & Sage Walnuts ($5.60) and Basil Cream & Rhubarb ($5.60), giving them a refreshing twist.

Apart from offering their sourdough bakes on their display, Sourbombe also offers interesting Matcha ($5.50 – $7) and Hojicha ($6 – $7.50) drinks selection, using powder supplied by Matchaya.

Interesting options include Matcha Latte ($5.50), Soy Caramel Matcha Latte ($6), Strawberry Matcha Latte ($6.50), Hojicha Latte ($6), Black Sesame Hojicha Latte ($6.50) and Blueberry Hojicha Latte ($7).

The Soy Caramel Matcha Latte ($6) came as a surprise as the soy used was not referring to soybean, but soy sauce reduction instead.

It may sound funky, but turned out to have a good balance from the tinge of savouri-ness added by the soy sauce reduction and the sweetness from the caramel using a full bodied, earthy and robust matcha latte as the base.

One thing to note, oat milk is used in all their lattes and thus they are dairy-free.

For the coffee drinkers, Black & White Cold Brews ($8) are supplied by Asterix Coffee Co. using a 2-beans-blend of Ethiopian and Brazil.

Alternatively, Sourbombe also offers Artisanal Tea ($5 – $6.50) and Kombucha ($7 – $7.50) fermented in-house.

Swish Rolls – NEW Swiss Roll Shop With Caramel Biscoff and Strawberry Pistachio Flavours, At Bukit Timah Cluny Court

$

Ollella has undergone a transformation over the years, from selling Choux when they first opened in 2016 to traditional Indonesian kueh in 2019.

The founder Marcella has always wanted to reintroduce French pastries back into the menu despite the transition in 2019.

Thus together with her Head Chef at Ollella who has 3-years baking experience at the defunct Antoinette, they decided to open another brand – Swish Roll.

Located along the stretch of shophouses at Cluny Court, Swish Rolls shares the same space as hole-in-the-wall Ollella with a striking yellow and pink shopfront.

Other cafes in the area include PRAIRIE by Craftsmen, The Affogato Bar, Plain Vanilla Bakery and Gastronomia.

Served mainly as a takeaway kiosk, there are only 2 tables in the alfresco area for dining-in, people-watching and looking out for wild chickens taking a morning stroll down the stretch.

One thing to note, even though both Swish Rolls and Ollella are sharing the same space, you will have to order twice if you are getting from both concepts.

Instead of airy Japanese-style roll cakes, Swish Rolls offers European-American Swiss rolls that are slightly denser than the Japanese version.

5 different flavours are available, both in slices ($5.20) or full roll ($15), namely Fudgy Brownies, Blackforest, Strawberry Pistachio, Lemon Meringue and Caramel Biscoff.

My favourite was the Strawberry Pistachio Swiss Roll ($5.20) made of vanilla sponge with strawberry puree and fresh cream, topped with crushed pistachio and freeze dried strawberry.

It is almost like a Japanese Swiss roll with a moist and fluffy texture, stuffed with generous fillings that has a nice balance of citrus notes from the strawberry and the earthy nutty profile of the pistachio.

It’s light and refreshing whereas the crushed pistachio and freeze dried strawberry adds a textural crunch to the overall texture.

The Caramel Biscoff ($5.20) comes with swirls of sea salt caramel and fresh cream in between layers of vanilla sponge, topped with Biscoff crumbs.

It’s almost like eating the real Biscoff biscuits, except in the form of a cake, with a sweet and malty taste.

4 different mini croissants are available: Chocolate Ganache ($3.50), Sea Salt Butter ($1.80), Turkey Ham & Cheese ($3.50) and Almond Frangipane ($3.50).

These are also available in Bags of 5 Sea Salt Butter Croissants ($8) or Premium Mix ($16) with all other flavours.

The Ham & Cheese Croissant ($3.50) is my favourite, using turkey ham, gruyere béchamel sauce within the flaky crust, topped with melted mozzarella & cheddar cheese.

There is a good balance of savoury gruyere béchamel sauce which complements well with the sweet, buttery taste of the croissant.

Chocolate lovers can look forward to the Chocolate Ganache Croissant ($3.50), with molten Valrhona dark chocolate ganache and a tinge of sea salt with cocoa powder for extra indulgence.

Specialty coffee is served using beans roasted by Brawn & Brains to go alongside the pastries.

If you are looking for a more hearty selection, Ollella offers Signature Nasi Lemak (Regular $3.50, Chicken Rendang $8), Lontong Sayur ($6), Beef Bakso ($8 – $10), Sate Ayam 6 sticks for $9) and Kueh Box (10 pieces for $18, 16 pieces for $25).

For gifting purpose, Ollella also offers 16 pieces Bamboo Kueh Parcel that comes with an assortment of Kueh Dadar, Lemper Ebi, Lemper Ayam, Binka Ubi, Pulut Inti, Kueh Salat and Lapis Sagu.

18 Best Croissant Bakeries & Cafes In Singapore – For Pain Au Choc, Passionfruit Meringue, To Strawberry Maple Croissant

$

0

Never knew that. The buttery, flaky, viennoiserie pastry of croissant is said to be of Austrian origin, though is mostly associated with France.

Through a process called laminating, the technique results in a layered texture similar to puff pastry.

The crescent-shaped French pastry is a savoury and occasionally sweet delight, with varieties from almond, chocolate, green tea, to even salted egg in Singapore’s context.

Here are the 18 places in Singapore to fulfill your croissants cravings in Singapore: (Note: while some other cafes may serve up tasty croissant, I have tried to include those who bake their own here rather than from a supplier.)

Petit Pain
315 Joo Chiat Road, Singapore 427566
Opening Hours: 11am – 5pm (Wed – Fri), 10am – 4pm (Sat – Sun), Closed Mon, Tues

The small, humble bakery has made wave with the Katong community, with several of their bakes sold out every day.

Petit Pain’s breads and pastries are only available in small batches, free of improvers, preservatives and artificial flavours.

The Classic Croissant ($3) requires a 3-day process to produce.

I decided to have it fresh because the buttery fragrance was just too alluring. And there was that ”wow” moment upon taking that first bite.

Some customers may prefer a more buttery, fluffy take, but I find this croissant very delicious and charming, especially the ability to maintain this level of crisp is tough in a humid country like this.

Reservations recommended, otherwise you may have to queue for a while, say about 30 minutes at least?

Their reservation opens once a week on Saturday at 4:00pm sharp via Petit Pain’s Facebook / Instagram messenger. Petit Pain (Joo Chiat)

Le Matin Patisserie
10, Block B Raeburn Park, #01-25, Singapore 088702
Opening Hours: 8am – 5pm (Wed, Fri – Sun), Closed Mon, Tues, Thurs

Singaporean Chef Mohamed Al-Matin trained at Le Cordon Bleu Sydney, and worked at some of the renowed patisseries there including Adriano Zumbo Patisserie and Black Star Pastry.

He was also previously the Head Pastry Chef of Restaurant Andre, and was also Pastry Sous Chef at one of the best restaurants in the world – Noma. An impressive resume.

To try his croissants, you can either head to the test kitchen on specific days, or get a Matin Pastry Box which comes with 5 or 6 pastries baked fresh daily.

For example, the The Le Matin Basics ($32 per box): Grand Matin contains 5 pastries of Croissant, Almond Croissant, Kouign Amann, Pain Au Choc, and Pistachio Escargot.

The classic Croissant is the traditional plain croissant laminated with French AOP butter. Though the more impressionable one would be the Pain Au Chocolat stuffed with luscious Valrhona dark chocolate and finished with a shiny Dark chocolate belt.

Sourbombe Bakery
UBS at 9 Penang Road, #02-03, Singapore 238459
Opening Hours: 10am – 3pm (Tues – Sat), Closed Sun, Mon

Genevieve Lee, runner-up of MasterChef Singapore’s first season, first started her online business Sourbombe in August 2020, focusing on sourdough Bomboloni – Italian doughnuts piped with various fillings.

The brand has finally shifted from an online business to a brick-and-mortar shop on the 2nd level of UBS Singapore Business Hub at 9 Penang Road.

Using homegrown sourdough starters for all her bakes, also available are Sourdough Croissants in very limited quantities.

You can have their plain OG Sourdough Croissant to experience the buttery tangy goodness with honeycomb layering.

For more exciting choices, there are those filled with specialty ingredients, from Passionfruit Meringue, Kaya with Soy Caramel, Black Sesame Mochi, Pistachio Mango, to Isphahan. Per box of 6 is at $39. Sourbombe (Penang Road)

The Bakehaus
130 Owen Road, Singapore 218934
Opening Hours: 8am – 5pm (Mon, Wed – Sun), Closed Tues

The Bakehaus is well-loved among those in the Farrer Park community for its Handmade Croissant ($3.50) made with Lescure Butter that gives that buttery and flaky texture.

They also have choices of Almond Croissant ($4.50), Almond Pain Au Chocolat ($5), Chocolate Varlhona Strawberry Croissant ($6.50), to Pain Au Chocolat ($4).

They pride themselves of not using any chemicals, preservatives and additive in all their bakes.

The Bread Rack
9, Yio Chu Kang Road, #01-55, Space@Kovan, Singapore 545523
Opening Hours: 9am – 5pm (Mon, Thurs – Sun), Closed Tues, Wed

Located near Hougang and Serangoon, The Bread Rack is at Yio Chu Kang Road is one of the newest bakery cafe opened in that area and has become quite popular.

Pictured above is the seasonal special of Strawberry Maple Croissant with creamy centre of Japanese maple cream. The Bread Rack (Yio Chu Kang)

Nuage Patisserie & Boulangerie
47 Kampong Bahru Road, Singapore 169361
Opening Hours: 11am – 6pm (Mon, Tues, Thurs, Fri), 8:30am – 5pm (Sat – Sun), Closed Wed

Nuage, pronounced as “nu-age”, means “cloud” in French and is a representation of the owners ideology in being carefree without restrictions in their bakes and pastries.

It joins the stretch of recent openings within the shophouses at Kampong Bahru, near Outram MRT Station.

Nuage Patisserie & Boulangerie is opened by three friends, two of them were home-bakers whereas the other has experiences as a Head Pastry Chef at a local Five-stars hotel.

Classic French pastries can be found here, namely Croissant ($4), Kouign Amann ($5.50), Plain Bagel ($3.50) and Bacon Onion Cheese Focaccia ($8.90).

Their Croissant ($4) which is deliciously crispy and fluffy, is made with French flour, Levain and AOP butter.

Also look out for their aethetic-looking Pain Au Chocolat ($4.50), Almond Croissant ($5.50), Ham & Cheese Croissant ($6.90), and seasonal specials. Nuage Patisserie & Boulangerie (Kampong Bahru)

Mother Dough Bakery
3 Jln Kledek, Singapore 199259
Tel: +65 6909 6604
Opening Hours: 11am – 5pm (Tues – Sun), Closed Mon

The term “Mother Dough” or pre-ferment, refers to the fermentation starter or sourdough culture used in bread making.

Owner and baker Naadhira started her bread education at The International Culinary Institute in NYC, and spent four years working in various bakeries in the Big Apple.

That includes Runner & Stone in Brooklyn, where she honed her skills in making baguettes and croissants.

The bakery serves up a variety of Croissant, Brioche, Baguettes, and Quiches, alongside a selection of Lemon Cake, Banana Walnut Cake, Dark Chocolate Cake, and Fruit & Nut Cake.

I managed to get my hands on the best-selling Almond Croissant – crispy and fragrant, well-worth for its popularly.

However, recently I thought that the quality may not be that consistent as I saw some on display were slightly on the burnt side. Mother Dough Bakery (Jalan Kledek)

Bakery Brera & Fine Foods
8 Empress Road #01-05 Singapore 260008
Tel: +65 6492 5428
Opening Hours: 7am – 6pm (Tues – Sat), 7:30am – 4pm (Sun, Mon)

Bakery Brera & Fine Foods is a humble bakery café found opposite Empress Road Food Centre. There are a number of reasons why the croissants taste good.

The making uses a combination of two types of wheat flour – French and Japanese; plus the additional of French butter.

As for the doughs, they are fermented overnight and laminated with proper temperature each step.

Strict observance and precision control are applied, from temperature control, fermentation, proofing and baking to bring out the best of wheat aroma and butter flavour (so as not to over-caramelise the butter and the pastry.)

Therefore, you would find their Croissants ($3.50) to be golden crispy and fragrant buttery flavour. Bakery Brera & Fine Foods (Empress Road)

LR Boulangerie
491 River Valley Road, Valley Point #01-02, Singapore 248371
Opening Hours: 8:30am – 6pm (Mon – Sun)

Besides serving their own coffee beans that are roasted in-house by Coffee Plus, LR Boulangerie offers a selection of bakes, mainly French-style breads and pastries, including cute and Instagram-worthy ones.

It is worthy to wait for their freshly-baked Croissants, who would probably be snapped out not long after they are out from the oven.

Compared to some others which are generally either fluffy or dense, these were light and crisp, of buttery layers and remarkably flaky texture. (However, online reviews seem to be fairly mixed, though I did have good ones after a couple of anonymous visits.) LR Boulangerie (River Valley)

Maison Sucree
63B Lengkok Bahru, #01-362, Singapore 152063
Opening Hours: 11am – 8:30pm (Sun – Fri), 11am – 7pm (Sat)

The Muslim-owned bakery Maison Sucreé is quite striking with its dark blue frontage and buttery aroma, and has gained quite a positive reputation via word-of-mouth.

I thought that the Original Butter Croissant ($3.50) was delightfully crisp (crispier than many of the famous brands out there) with good amount of fluffiness and buttery aroma. (However, standard may not be that consistent after they expanded.)

All the baked goods are rolled, baked and crafted by the Head Baker Tommy Lim, who was previously from Jones The Grocer and has a heapful experience of 10 years in the bread and pastry industry.

Every croissant baked from Maison Sucreé are prepared at least 3 days prior, using ingredients such as natural homegrown levain and premium quality butter from Brittany France. Maison Sucreé (Lengkok Bahru)

Artisan Boulangerie Co.
#01-01, 118 Killiney Road Singapore 239555 (Somerset MRT)
Tel: +65 6444 8130
Opening Hours: 7:30am – 8pm (Mon – Sun)

As all pastries and bread at Artisan Boulangerie Co. are handmade daily, the bakers are in the kitchen wee early in the morning to churn out fresh bakes.

The bakery uses French flour imported from a traditional flour mill in Chartres, allows for at least 12 hours of fermentation of the breads.

ABC’s Croissant has a delicate crust which cracks with a crisp when it is broken apart, revealing an airy and soft inside, with circular twirls.

The flaky crust may leave some crumbs on the tray or plate, but some find that all the more delightful.

Tiong Bahru Bakery
56 Eng Hoon Street, #01-70, Singapore 160056
Opening Hours: 7:30am – 8pm (Mon – Sun)

You know there are some places you instantly feel connected to, and home-growth brand Tiong Bahru Bakery managed to achieve that for many customers, especially the expat crowd.

Other than their Kouign Amann, their Croissant is generally well loved, with choices of classic Croissant, Almond Chocolate, Almond, Green Tea Almond, and Pain Au Chocolat (my personal favourite is the Green Tea Almond.)

The Croissants are handmade, never frozen, and baked fresh every two hours with French flour and French butter – the butter itself is made from Normandy cow milk which gives the pastry more layered richness. Tiong Bahru Bakery Foothills (Fort Canning)

Bread & Hearth
18 Keong Saik Road Singapore 089125 (10-15 walk from Outram Park MRT)
Tel: +65 65347800
Opening Hours: 7am – 8pm (Mon – Sun)

Their Le Croissant ($3.20) is evidently their signature, made with unbleached flour from France to produce the croissant dough (detrempe) used to laminate the fats (beurrage).

Emphasis was placed on the lamination and folding technique to achieve the best honeycomb pockets within the croissant, in order to be “as European as possible”.

My verdict: There but not quite there yet. Definitely better the average brands, but without the oomph and flakiness of the buttery crust, that to me, defines a good croissant.

Others may like an airy fluffy pastry, and Bread & Hearth’s version goes somewhere in the middle.

Baker & Cook
77 Hillcrest Road Hillcrest Park, Singapore 288951, Singapore
Tel: +65 6469 8834
Opening Hours: 7am – 8pm (Sun – Thurs), 7am – 10pm (Fri – Sat)

Delve into hearty European breakfast and colorful pastries at Baker & Cook.

The best-selling pastry is the Butter Croissant ($4), and founder Dean Brettschneider insists on using Anchor butter from New Zealand.

The butter is said to be made from cows that are raised on lush green pastures and left to wander free-range, which gives the golden churn a richer taste.

Therefore, the Croissants feature delicate layers, and is typically crisp and flaky with light and soft centre.

Maison Kayser
Scotts Square #B1-09, Singapore 228209
Tel: +65 6636 3672
Opening Hours: 8:30am – 7pm (Mon – Fri), 8am – 7pm (Sat – Sun)

Frenchman Eric Kayser from the original Parisian bakery belongs to a 4-generation family of bakers.

Perhaps some do not know the origins of this bakery, which is a joint venture of the two pioneers in bread-making – the original Parisian bakery with the Japanese Kimura family.

Together, they created a croissant which was named the best by Paris’s Figaro newspaper.

Here you will find handmade bread baked in-house daily, early in the morning. What makes the bread special is the use of natural leaven and selected flours.

The dough patiently undergoes a long fermentation process, resting for 12 hours before baking. It is this technique that keeps the bread in buttery and soft.

Swish Rolls
Cluny Court, 501 Bukit Timah Rd, #01-02B, Singapore 259760
Opening Hours: 9:30am – 6pm (Mon – Sun)

Located along the stretch of shophouses at Cluny Court, Swish Rolls shares the same space as hole-in-the-wall Ollella with a striking yellow and pink shopfront.

Swish Rolls (Cluny Court)

Brotherbird Coffeehouse
32 Bali Lane Singapore 189868
Opening Hours: 10am – 4pm (Mon – Tues), 10am – 6pm (Wed – Sun)

Brotherbird Coffeehouse’s Croissant has a texture quite different from all the rest – some love it, some not as much.

There are basically four different groups you can expect from this revamped café – twice-baked croissant, the regular croissants (some pumped with fillings), chocolate series, and Danish pastries.

The more adventurous should try the twice-baked croissant series to experience the lightly-crisp exterior which contrasts with the slightly sticky and chewy mochi slab in the middle.

The inside is made with a glutinous rice flour mix, while the pastry takes a long process of 12 layer folding to create a more flaky texture.

I wished it was overall more fluffy in the middle for a better contrast. Brotherbird Coffeehouse (Bali Lane)

Mr. Holmes Bakehouse Singapore
9 Scotts Rd, Pacific Plaza Level 1 #01-01/02/03, Singapore 228210
Opening Hours: 8am – 8pm (Mon – Sun)

Founded by co-owner and pastry chef Aaron Caddel, Mr. Holmes Bakehouse was first established in 2014 as a humble wholesale bakery along the bustling Tenderhill district in San Francisco, before it catapulted to fame on social media over its cruffins.

The other interesting fact: this Singapore outpost is the only Mr Holmes Bakehouse left in the world (The previous popular SF and Seoul’s outlets have closed.)

Croissant choices include Butter, Matcha, Chocolate, Ham & Cheese, Churro, to more interesting ones of Lemon Meringue Pie, Yellowpink and California. They are priced slightly on the higher side, from $4 to $7.50 for the fanciful fillings.

They seemed to get it right with the flakiness, fluffy inner texture and smooth creamy filling yet not artificial tasting.

Okay. My main qualm about pastries and cakes from America is the sweetness level, but this didn’t go overboard at all. Mr. Holmes Bakehouse Singapore (Pacific Plaza)

20 Best Patisserie And Cake Cafes In Singapore

Kki Sweets
3 Seah Street, #01-01, Singapore 188379
Tel: +65 9799 2668
Opening Hours: 11am – 7pm (Wed – Sat), 11am – 5pm (Sun), Closed Mon, Tues

Husband and wife pair Kenneth and Delphine gave up their daily jobs to set up this characteristic desserts patisserie café, which has moved several times (also a few years’ break before).

This time Kki Sweets takes on a different form and style, located at Seah Street on the ground level of Raffles Hotel.

What remains is their persistence to the quality of cakes, and their Japanese style in curating and decorating the place – cream-coloured walls, wooden furniture, in minimalist approach.

The cakes have cute names, and you can make a guess of its components – Marronnier ($9.50), “J” ($13.50), Koide ($10.50), Arata ($10.50), Teh ($9.50), and Fromage ($13.50), all on a rotational basis.

My favourite was easily “J” ($13.50) coming like a dainty pot of plant.

Be careful about touching the ‘pot’ directly because it is actually a base of black sesame made of kantan jelly, filled with matcha, yuzu and chocolate soil.

The matcha and goma combination has always expectedly delectable, but what really worked was that excitement of various textures from the rich creamy layer (almost reminding me of cheesecake), crunchy soil, along with smooth covering. Kki Sweets (Seah Street)

Baker’s Brew Café
Orchard Paragon, 290 Orchard Road #05-46 Singapore 238859 (Orchard MRT)
Tel: +65 6909 0669
Opening Hours: 10:30am – 8pm (Mon – Sun)

The Ondeh Ondeh Cake has become one of Singapore’s most popular trending cake that we can proudly say has local origins.

And Baker’s Brew offers one of the best versions around, plus it is not that sweet. Ah, that moist pandan sponge along with fragrant gula melaka and desiccated coconut.

The flavours of coconut are extended to its pastel green and white buttercream icing, and toasted coconut and coconut cookie toppings.

The special Ondeh Ondeh balls complete the look of Baker’s Brew’s best-selling signature cake.

Other than the Ondeh Ondeh Cake, there are many noteworthy “Classic Cakes” offered including Roasted Pistachio and Rose Cake, Matcha Azuki Cake, Salted Caramel Chocolate Cake, Classic Basque Cheesecake, and Dual Fromage. Bakers’ Brew

Pantler
474 River Valley Road Singapore 248359
Tel: +65 6221 6223
Opening Hours: 10:30am – 6:30pm (Tues – Sun), Closed Mon

“Pantler” is word used to define “a servant or officer in charge of the bread and the pantry in a great family”.

The new River Valley space is actually made up of two units, combined into one.

Half is the kitchen where all their products are made from scratch, and the other half is the retail and dining space.

The bigger kitchen is to accommodate producing over 20 varieties of cakes and pastries, and other baked and packaged items such as cookies, sweets, jams, and chocolate.

Pantler’s Head Chef is Tomoharu Morita, who was part of the award-winning pastry team at Grand Hyatt Tokyo for close to a decade. Chef Tomoharu was also part of the opening team for Joël Robuchon Singapore.

Signature products include the Yatsura ($9.50) featuring hazelnut praline and dark chocolate ganache, Chou a la Creme ($5.50), Pantler Cheesecake ($7.80), Dark Chocolate Delice ($8.80), and the Strawberry Shortcake ($9.50).

If you are looking out for the new stuff, they are the Raspberry Pistachio ($9.50), Russa ($9.50), Gianduja ($9.50) and Ivory ($9.50). Pantler (River Valley)

LUNA
53 Amoy Street, Singapore 069879
Opening Hours: 12pm – 6:30pm (Sun – Thurs), 12pm – 7pm (Fri – Sat)

LUNA patisserie at Amoy Street known mouth-watering cakes and pastries, has also launched a number of new buttery tarts in their menu.

Not to be confused with Lunar Coffee Brewers (OUE Downtown Gallery) and Luna Cafe (One North), LUNA is a patisserie located near Amoy Street Food Centre.

While its menu changes periodically according to the seasons, best-sellers still available continue to be the popular Orh Nee Cake ($8 per slice, $80 per whole cake) with velvety yam ginko paste and yam cubes; LUNA 2.0 ($9 for entremet, $90 for cake) made of Valrhona Guanaja 70% chocolate mousse; and Matcha Opera ($8 for slice, $80 for whole cake).

The Orh Nee was my favourite of the selection, made of pumpkin sponge layered with a mixture of yam and ginkgo paste.

The surprise came from the textural contrast in the yam and ginkgo paste, a mixture of smooth and velvety puree and bite-sized chunks of yam.

The Orh Nee is then topped with whipped cream frosting and dollops of yam cream with a touch of desiccated coconut that enhanced its sweetness. LUNA Singapore (Amoy Street)

Tigerlily Patisserie
350 Joo Chiat Rd, Singapore 427598
Opening Hours: 9am – 6pm (Tues – Sun), Closed Mon

Tigerlily Patisserie has finally shifted from an online bakery to a brick-and-mortar dine-in shop at Joo Chiat.

It was created to offer baked goods with unconventional flavours, using fine European techniques injected with an Asian spirit.

A wide selection of pastries was on display, ranging from interesting and unique savoury options such as Tomato & Artichoke Tart ($7), Asparagus & Leek Tart, Mushroom Bacon Quiche and Garlic Herb & Cream Cheese Babka ($8).

Their uniqueness is the various herbs infused within their pastries such as Chitose Strawberry & Elderflower Tart ($11), Lemon Thai Basil Tart ($8), The Beehive ($11) infused with lemon thyme and Pink Guava & pear ($10) made of elderflower mousse.

The most eye-catching dessert would probably be The Beehive ($11), made from lemon thyme and litchi honey jelly and light lemon sponge encased in a globe-shaped honey parfait, further topped with swirls of yuzu mousse in honeycomb pattern.

This is an intricate piece of art, beautifully crafted visually with a well-balanced sweetness and citrus-ness, light and refreshing without being overwhelming on the palate. Tigerlily Patisserie (Joo Chiat)

Patisserie CLÉ
79 Lucky Heights, Singapore 467627
Opening Hours: 9:30am – 6:30pm (Mon, Wed – Sat), 9:30am – 5pm (Sun), Closed Tues

Patisserie CLÉ (means ‘key’ in French) is inviting patrons to unlock and uncover new experiences, with an expanded menu here at Siglap.

Patisserie CLÉ (Siglap)

The Fabulous Baker Boy
Aliwal Arts Center, 28 Aliwal Street, #01-01, Singapore 199918
Opening Hours: 9:30am – 6pm (Tues – Sun), Closed Mon

For fans of Chef Juwanda Hashim’s bakes, yes, he is back fabulous again at Aliwal Arts Centre – a short walk from Arab Street.

The bakery cafe used to be located at Fort Canning.

His cake style is classic layered, known to be moist, with some interesting experimentations in terms of frosting.

Signatures include Valrhona Chocolate Cake ($9.50), Nutty Monkey ($9.50) which is a banana coconut cake, Raspberry Lemon ($9), and Green Tea Praline ($9.50).

Some of the cakes are cheekily named, such as a 10-layered butter torte hazelnut praline cake called “The Hossan Leong” ($11). The Fabulous Baker Boy (Aliwal Street)

Sinpopo Brand
458 Joo Chiat Road, Singapore 427671
Tel: +65 6345 5034
Opening Hours: 11pm – 9pm (Mon – Sun)

By the team behind Awfully Chocolate, Sinpopo Brand manages to spruce up traditional kueh recipes with modern presentations.

Think Pandan Kaya Cake, Gula Melaka Cake, Pulut Hitam Cake, Dar Dar Mille Crepe and Putu Piring Cake – familiar nostalgic treats of well-loved local flavours made into cake forms.

Newer items include Basque Burnt Cheesecake, mouth-watering Tres Leche Cake, Sticky Date Pudding, delectable Lemon Yoghurt Cake, and Matcha Crème Brulee Cake.

The Pandan Kaya Cake is a hybrid of pandan chiffon cake and kaya toast, this handmade gluten-free cake is made of glutinous rice flour.

Inspired by the tiered dessert kueh salat, the cake is tinged with a beautiful natural blue from Blue Pea flowers, often used in Peranakan cuisine.

In between the cake layers is the luscious slow-cooked slow-stirred pandan kaya spread and fresh coconut cream.

What I really like about this cake is that you get a bit of that fluffy chiffon and creamy nostalgic kaya coming together – a blend of two favourite cakes coming together. Best to go with a cup of teh-o kosong. Sinpopo Brand (Katong)

FLOR Patisserie East Coast
53 Upper East Coast Road, Singapore 455214
Opening Hours: 11am – 7pm (Tues – Sun), Closed Mon

Fans of Japanese-style cakes and pastries will be familiar with FLOR Patisserie with 2 other outlets at Duxton Hill and Capitol Singapore. Their Siglap outlet works as their central kitchen.

Using mainly fresh fruits which are lighter in flavour than conventional French pastries, locally-grown brand FLOR Patisserie doesn’t use artificial colourings or chemical agents in their cakes.

Customers can choose from a wide selection of Tofu Chiffon ($15), Tea Capsules ($17 – $21), Cheese Tart (1 for $5, 10 for $45) and baking equipment.

Signature pastries include the Sophie ($9.50), Passion Donut ($9), Matcha sponge Paris Vert ($8.90), Tarts ($12.50) and Swiss roll ($7.48).

The Paris Vert ($8.90) comes with matcha cream and Azuki cream, encased within a match meringue and matcha sponge.

I enjoyed the soft, light and airy texture whereas the matcha taste was on the fainter side. Flor Parisserie (Upper East Coast Road)

It is opened by three friends, two of them were home-bakers whereas the other has experiences as a Head Pastry Chef at a local Five-stars hotel.

Their cakes menu is on a rotating basis and there were Pistachio Strawberry ($9.20), Strawberry Popcorn ($9.80), Brown Sugar Boba ($9.60), Blueberry Cheesecake ($8.50) and Elmo/ Cookie Monster Cupcake ($6.50).

My favourite was the Brown Sugar Boba ($9.60) with a brown sugar Swiss roll sandwiched between 2 butter cookies.

Remove the butter cookies to reveal the soft and fluffy brown sugar sponge, generously piped with brown sugar Chantilly and brown sugar boba that gives it a nice contrast in textures. Nuage Patisserie & Boulangerie (Kampong Bahru)

Dolc Patisserie
67 Kampong Bahru Road, #01-00, Singapore 169371
Opening Hours: 9am – 6pm (Mon, Wed – Sat), 10:30am – 5pm (Sun), Closed Tues

Specialising in French techniques with modern flavours and incorporating influences from Spain, Dolc Patisserie wants to introduce a piece of Barcelona in their pastries to the locals.

It also hopes to provide a familiar taste of hometown to the Spanish expats residing in Singapore.

The desserts display features their current selection of the day, ranging from Fruit Tart ($8+) to Bananier ($8+) made from chocolate and banana, Elsie ($8.50+), Passionfruit Meringue ($7.50+), Charlotte ($8.50+), chocolate with coffee Royale ($8.50+) and Mango Shortcake ($8+).

It was indeed rewarding and therapeutic to look at these pretty and dainty desserts that are beautifully crafted.

I ended up with the velvety red Charlotte ($8.50+) made of Strawberry, Basil and Mascarpone.

Appearance-wise, the Charlotte reminded me of the Mango Mousse Spring cake from Two Bakers, except that the latter is yellow in colour. Dolc Patisserie (Kampong Bahru)

QUEIC
41 Kreta Ayer, Singapore 089003
Opening Hours: 11am – 7pm (Mon – Sat), Closed Sun

After 2 years, the team behind Olivia Restaurant & Lounge has finally opened a standalone cake shop for their signature cheesecake, QUIEC, just one street away from their sister outlet at Keong Saik.

Their signature Olivia Burnt Cheesecake can be found here at QUEIC in various sizes: 4” ($15), 6” ($48) and 9” ($78).

I remembered vividly how distinctive and remarkable Olivia’s version is, using Valdeon cheese (a Spanish blue cheese made from a blend of goat and cow milk) that give it a savoury note, on top of an almond sable base that is firm and crisp, before scorching the top layer to add a caramelised touch.

More like a pie instead of the cake due to the almond sable base, the result is a semi-molten cheesecake at room temperature, creating a myriad of textures from the oozy cheese to the crazy caramelised layer and the crunchy almond sable base.

There is a nice balance of sweet and savoury notes due to the Valdeon cheese used, intense but not overpowering, slightly salty and pungent, with a complex combination of flavours. QUEIC (Kreta Ayer)

GLAZE
TripleOne Somerset, 111 Somerset Road #01-K1, Singapore 238164
Opening Hours: 8am – 6pm (Mon – Sat), Closed Sun

There are not many indie cafes along Orchard Road and it is always welcoming to see a new cake cafe appearing in town.

Diners can look forward to their signature Jardin ($8.50 per piece, $65 for whole 6 inches cake), a strawberry shortcake which was the very first cake created on the menu.

Named after a vibrant and beautiful town in the mountains of Colombia, the word “Jardin” means “Garden” in Spanish, reflected in the slices of strawberries neatly layered in between the sponge and cream.

Probably one of the most memorable strawberry shortcake I had eaten of late, the sponge layer was memorably soft and moist, with a milky taste light and refreshing.

The layered strawberry slices added a citrus punch to the overall taste, a pleasant contrast in textures to the fluffy cake. GLAZE (313@somerset)

Edith Patisserie Cake Bar
UBS at 9 Penang Road, #01-06, Singapore 238459
Opening Hours: 12pm – 8pm (Mon, Wed, Thurs), 12:30pm – 9pm (Fri – Sun), Closed Tues

Edith Patisserie is named in memory of the owner Ethel’s mother, who passed away when Ethel was 18 years old.

Being a home-grown bakery established in 2013, they specialise in layered cakes, brownies and tarts for birthdays, weddings and other celebratory events.

Their aim is to create something new and original according to local palate and I remembered buying their Original, Matcha and Thai Milk Tea Boba Tarts when they first launched it few years ago.

Their cake shelf features a wide selection of their bestsellers: Cookie Dough Speculoos Chocolate ($8), Mango Pomelo ($8), Lychee Rose ($8) and Earl Grey Lavender ($8).

Other cakes on display include Pandan Coconut Gula Melaka ($8), Classic Chocolate ($8), Thai Milk Tea ($8), Raspberry Passionfruit ($8), Chocolate Praline Passionfruit ($8), Mini Yuzu Strawberry Loaves ($5), Mini Lemon Loaves ($4.30) and Brownies ($1.70).

My favourite was the Lychee Rose Cake ($8) made using alternating layers of vanilla Swiss sponge and rose-scented buttercream – very floral and fragrant. Edith Patisserie Cake Bar (Penang Road)

LA VIE
204 Jalan Besar Singapore 208890
Opening Hours: 11:30am – 8:30pm (Tues – Thurs), 11:30am – 10:30pm (Fri – Sun), Closed Mon

LA VIE is conceptualised on the idea of providing people with a place to enjoy fine pastries, drinks, art appreciations – you will see hanging paintings of rotating local artists on sale.

The business was previously known as Reverie Patisserie, an online patisserie shop specialising in various French pastries and butter cookies.

The name means “life” in French (minus the predictable ”en Rose”).

One of the reasons for adopting this French name is because the Head Pastry Chef and founder was trained in the famed Le Cordon Bleu academy specialised in French pastry.

Some of the signature dessert items include Chloe ($8.50) – a lychee rose entremet, Kaiser ($9) – a mango and passionfruit entremes, Alfie ($9) – a chocolate banana entremet, and Trio Chocolate Cake ($10) – the other one without the fancy name.

I went with the pretty-looking Watermelon Strawberry Cake ($9.50), with fresh sliced watermelon sandwiched between layers of rose chantilly and nutty almond dacquoise. La Vie (Jalan Besar)

The Twisted Trio
Blk 85C Lorong 4 Toa Payoh #01-384 Singapore 313085
Opening Hours: 12pm – 5:30pm (Tues – Sat), Closed Mon

The Twisted Trio was started by three friends that have known each other since young, serving a range of cakes and coffee.

However, do note that this is a space that is more catered towards takeaways. What I heard is, best-sellers have been flying off their shelves like hot keks.

However, there is a small corner at the cafe that can accommodate 3 customers.

The first item that caught my eye was the Watermelon Rose Cake ($8).

You can see a distinct layer of watermelon sandwiched right in between, topped with a generous number of grapes and strawberries.

Add a couple of sprinkles of pistachios and you have a dessert that is worthy to be put on your Instagram feed.

First bite in and you can taste the distinct floral notes of the rose. The watermelon added a nice texture to the entire cake. Do not worry about the calories because this cake is one of the less sweet ones I have had in a while. The Twisted Trio (Toa Payoh)

Lee’s Confectionery
343 Jurong East Street 31, #01-59, Singapore 600343
Tel: +65 9183 8447
Opening Hours: 12pm – 7pm (Mon, Thurs – Sun), Closed Tues, Wed

Lee’s Confectionery has attracted a lot of attention on social media, and it certainly has grabbed mine with its visually satisfying in-house made pastries.

Located near Chinese Garden MRT, the confectionery serves roughly 6 to 7 different types of tarts, with some varieties available on a rotational basis.

The best-seller here is the Dale ($8), which includes matcha included 4 ways – in a sponge, as crumble, matcha mousse, passionfruit compote with seeds on a tart sprinkled with… matcha powder.

A refined and polished version with multiple different textures.

Soft sponge cake, crispy crumble, creamy mousse, crunchy passionfruit seeds and sturdy tart base. Lee’s Confectionery (Jurong East)

The Better Half
1 Everton Park, #01-43, Singapore 081001
Tel: 9248 7088
Opening Hours: 10am – 4pm (Tues – Sun), Closed on Mon

Established by two passionate individuals who also happens to be each other’s better half, the café aims to serve honest and real fare to everyone who visits.

The bakes are placed in the shop exudes a certain Korean bakery vibe – kind of what you see in Layered 레이어드 or Cafe Highwaist.

All the bakes you see in The Better Half all made from scratch in-house. Even if you order a toast, the bread is made within the store and not from a supplier.

While I was thinking of what to get, the owners kindly suggested a slice of Rose Raspberry Cake ($8) which they were just about to display.

Essentially a rose sponge cake with raspberry cream cheese, the cake was fluffy in texture and not dry at all. The Better Half (Everton Park)

Sugar Thieves
BLK 333, Kreta Ayer Rd, #01-23, Singapore 080333
Opening Hours: 11am – 8:30pm (Mon, Wed – Sat), 10:30am – 7:30pm (Tues, Sun)

With a great variety of pastries lined up against the glass window like a well curated dessert table, many passersby cannot help but whipped out their phones to capture an Instagram shot.

The first dessert that caught my attention was the Strawberry Watermelon Cake ($8,90).

Other choices include Matcha Strawberry Roll ($7.90), Chai Latte Reindeer Tart ($8.90), Sticky Date Bundt ($5.50), Coffee Frosting on Carrot Bundt Cake ($6.90) and the only savoury item Kimchi Tuna Quiche.

The cutest looking pastry goes to the Chai Latte Reindeer Tart ($8.90), made up of chocolate sponge, salted caramel goo and specula’s crumbs to give it a sweet and savoury taste with a crunch.

With a rotating menu every 3 months due to the seasonal produce used, we can expect more tasty bakes from Caleen and her team in the upcoming months. Sugar Thieves (Kreta Ayer Road)

KURA Singapore
46 Kim Yam Road, The Herencia #01-07 Singapore 239351
Tel: +65 9722 2996
Opening Hours: 11am – 6pm (Mon – Sun)

KURA 蔵 in Japanese stands for a “storehouse”, a place where the owners would ‘store’ treasured pastries for customers.

Some of their signature offerings include the Key Lime Tart ($4, $7.5), Earl Grey Tart ($8), Dark Black Forest ($8.50), Uji Triple Matcha Tart ($4.60, $8.50), Kopi Gao Tiramisu ($8), Hojicha Tiramisu ($8) and even a Mango Pomelo Tart ($9).

The Dark Black Forest ($8.50) which is a contemporary twist on nostalgic flavours comes recommended.

While it didn’t look like a black forest cake at all, it kept its ‘cherried’ essence within, and I enjoyed the soft chocolatey mousse-like texture. Kura (Kim Yam Road)
